We call it the "annual pinot safari", our three-day quest to find some of the best pinot noir recently produced in New Zealand. This year, as is customary, prior to setting out each expedition member shared their views on the qualities they were seeking. For panel chair John Belsham, ageability was a priority: "We have to identify wines that will age. Great wines all have a swagger, even when they're young." Cameron Douglas was looking for what he described as 'pinot noirness' – "it's not a flavour, but a heartbeat, a soul, poise and tension". For John Saker, structure was all-important: "Wonderful fruit needs some serious scaffolding. Tannin management is the big challenge." From a field of 172 wines, some fine examples emerged, with 11 receiving the maximum five stars.

Fresh turmeric has an incomparable, earthy, almost indescribable flavour, and it adds stunning depth and colour to a curry – just be careful, as it will stain your hands, clothes and even porous benchtops. Fresh curry leaves are another of my favourite ingredients. They are highly aromatic with a spicy, smoky fragrance that is genuinely unique.

Recipe: Mustard & maple-glazed roast vegetables

Prepare a selection of vegetables suitable for roasting.  Combine several tablespoons each of olive oil, maple syrup and wholegrain mustard. Toss two-thirds of the mixture through the vegetables and place in a hot oven to cook. While the vegetables are roasting, boil some brussels sprouts until just tender then drain and toss with the remaining mustard glaze. Add to the roasting vegetables in the last 10 minutes of cooking. Serve scattered with crispy bacon.
