Recipe: Mustard Chicken with Portobello, Spinach & Parmesan Risotto

MUSTARD CHICKEN WITH PORTOBELLO, SPINACH AND PARMESAN RISOTTO
Ready in: 40 minutes
Prep: 15 minutes
Cook: 25
Serves: 2–3

Mushroom broth
1 Portobello mushroom, thinly sliced (from a 250g punnet)
2 sprigs thyme 
1 teaspoon salt 


Mustard chicken 
300g skinless, boneless chicken breast 
1 teaspoon wholegrain mustard
1 teaspoon Dijon mustard
1 teaspoon vinegar (e.g. white wine, cider)


Portobello, spinach and parmesan risotto 
1 tablespoon butter
1 tablespoon olive oil
½ red onion, finely diced
1 clove garlic, minced
½ leek, white and pale green part only, thinly sliced
Remaining punnet of Portobello mushrooms, thinly sliced
1 teaspoon finely chopped thyme leaves 
1 teaspoon salt
1 cup arborio risotto rice
¼ cup red wine or chicken stock
3 cups reserved mushroom broth
¼-½ cup finely grated parmesan cheese
Zest and juice ½ lemon
1-2 handfuls baby spinach leaves

Hold the bacon: pro high-fat diet study has got it wrong for Kiwis

An international study of more than 135,000 people from 18 countries has found that people with high-carb diets are more likely to have poor health than people with high-fat diets.

But before you start reaching for the bacon, a New Zealand expert says the results mean little for the average Kiwi.

The study, presented at the European Society of Cardiology Congress and published in The Lancet, suggests that a high-carbohydrate intake is associated with a higher risk of total mortality compared with a low-carb diet. Meanwhile, a high-fat intake was associated with a lower risk of death compared with low-fat diets.

The researchers suggested a healthy diet would have 50-55 per cent carbs and about 35 per cent fats.

Fifth Harmony: New album sees the group back in tune with one another

Inside a Burbank rehearsal studio, the women of Fifth Harmony – surrounded by the thousands of album booklets they’ve autographed for fans, the most dedicated of whom are known as “Harmonizers” – are having an emoji debate.

They want to use the digital icons to accompany the online reveal of the track list for their upcoming self-titled album, which came out last Friday via Syco Music/Epic.

Dinah Jane Hansen, 20, suggested a finger pointing downward as a clue for the album’s lead single, Down, but the rest weren’t as easy.

“We need to go quicker, guys,” Ally Brooke Hernandez, 24, instructs as they struggled to stifle giggles.

After all, there’s other, more important business for Fifth Harmony to convey in 2017.

Recipe: Sam Mannering's juicy paper-wrapped roast chicken

I don’t need to go on too much about the joys and relative ease of a good roast chook. This method is lovely because there is no chance of the bird drying out. Try and use as interesting a mix of mushrooms as you can find; if you’re lucky enough to get your hands on some truffle, go for it. Of course, you don’t need to add bread to the stuffing; you might want to use cooked puy or green lentils instead. A bit of bacon, prosciutto or speck wouldn’t go amiss either. Go for a Bostock’s chicken – the best by a country mile.

Recipe: Rhubarb fool with orange shortbread

Fools have the perfect balance of tart fruit and creamy decadence, and rhubarb makes a great fool. Just be sure to pair it with really good custard, home-made if you have time, with plenty of vanilla seeds in it. With the addition of shortbread for some welcome texture, you have heaven in a glass.
