VEGETARIAN GADO GADO
Serves 4
2 tablespoons vegetable oil
1 shallot, finely chopped
2 cloves garlic, finely chopped
½ red chilli, chopped
1 lemon grass stalk, thinly sliced
¼ cup crunchy peanut butter
2 tablespoons soy sauce
1 tablespoon rice vinegar
½ cup coconut milk
1 teaspoon brown sugar or palm sugar
Heat the oil in a saucepan and fry the shallot with the garlic, chilli and lemongrass until soft – about 5 minutes.
Add the peanut butter, soy sauce, rice vinegar, coconut milk and sugar. Bring to a gentle simmer and cook for a few minutes. Adjust seasonings as required. Serve with a platter of soft or hard-boiled eggs and vegetables such as boiled new potato, blanched green beans, sliced capsicum, cherry tomatoes and carrots.

General Practitioners Council chair Dr Jan White says: "I think we are seeing a big, big peak at the end of winter that we usually see earlier in winter.“

Anna Curzon is the chief partner officer at accounting software giant Xero, and was a finalist in this year’s Women of Influence awards. Curzon leads the company’s global partner teams. Before Xero, Curzon worked in internet banking at ASB and digital first at Spark. The 43-year-old, who grew up in the Waikato near Ngaruawahia and is now based in Auckland, spoke to Britt Mann about her rise to the top of New Zealand’s tech industry.
