By 9.30am, the shop is empty â except for a few straggling soups. It’s all quiet while Pam Timms goes through orders with the chef over a cup of much-needed coffee.
The chef’s been up since 2am, making sweet pastries that have been dispersed throughout Dunedin.
“The one thing that people ask is: ‘What does he do for the rest of the week?’,” Timms says with a smile.
She helps out every Friday morning at Highgate Bridge, or The Friday Shop as it’s lovingly known to most, selling chef Jim Byars’ wares alongside his wife Rachel and Leanne Kennedy.
“We just go: 'Not much’,” she jokes. It’s their only day of business â that’s why people ask. The rest of the week Byars makes everything to fill the fridges and counter tops. “Nothing, except for work,” Byars adds wryly.
