Recipe: Beetroot puree from Gather Food House in Hamilton

When Hamilton chef Ashleigh Brodie first started at Melbourne cafe Top Paddock in 2013, she was on the egg section. She cooked thousands of eggs – poached, scrambled, boiled, omelettes – at the eatery in Richmond that has won prestigious awards and draws big crowds of diners. She did eggs for six months, and over the following few years she worked her way up to sous chef.
