I seldom eat duck as I consider it a rather pricey meal, but when I do have some I really enjoy it. This recipe, based on one by Patricia Wells, is a bit of a favourite. You could of course make this with duck legs and either stuff the filling under the skin or put the flavourings in the pan with the potatoes and olives, but you’ll need to cook it for longer. This recipe is quite adaptable รข you could increase or decrease the amounts with ease for smaller servings.
