A gardening friend has a glut of tomatoes at present and I’m happily on her give-away list. With fat purple eggplants going for a dollar a pop at Hamilton Farmers’ Market, and courgettes and capsicums on a rampage, I’m brewing the tomatoes and other beauties into big batches of the French culinary classic ratatouille.
