You know it’s nearly Christmas when you’re eating a delightfully fruity eccles cake for morning tea at Hamilton’s River Kitchen cafe. It’s made with crunchy, buttery, sugary puff pastry filled with spices and currants, and its sweet flavours are neatly offset by a slice of aged Nottinghamshire Stilton cheese on the side.
