As I stood in line at my local butcher’s the other day, I was debating whether a recipe with beef short ribs would go down well. Two decent supermarkets had failed to stock them and there's a fine line sometimes, between offering something new and it being too inaccessible. Then the man in front of me asked for two kilos of them.
