Recipe: Botswana Butchery's mushroom and ricotta crepes

A substantial vegetarian dish to eat anytime of the day. Great by themselves, the crepes are even better when served with a French Puy lentil salad.The crepes can be made ahead and frozen, ready to take out and use later.
