Recipe: Nadia Lim's coconut and passionfruit cupcakes

Most cupcakes are full of refined flour and sugar, which is no problem when they're for a special occasion, but I find them a bit too dry or cakey for my liking at times. These cupcakes are quite the opposite: bite in and you're rewarded with an incredibly moist, luscious mouthful, thanks to the coconut and sweet and tangy tropical lime and passionfruit in a cream cheese icing. They're gluten-free, and can be made refined-sugar-free if you like.
