Recipe: Sam Mannering's edamame, chilli, mint and ricotta smash

Edamame are young soybeans. I remember the first time I ate one. I was at a rather smart Japanese restaurant, about 14 years old and at the absolute height of awkwardness. When I was offered a bowl of edamame, I tried to eat the whole pod, not realising that you only eat the beans inside.
