Recipe: Butterflied veal with balsamic, garlic and rosemary

I feel a little irked about what appears a rather common aversion to veal. I know that I may be creating a bit of an uproar here, but New Zealand veal is to beef what lamb is to mutton. Sentiment and misunderstanding seems to prevail, leaving it a sorely underrated product.
